Expectation meets reality in the stunning, stunning, STUNNING new book by @thekoreanvegan.

Part mémoire, part cookbook, part food porn- this is bound to be up there as one of my all time favorite cookbooks. I am only 3 recipes in, but I can just feel it!

Each of these 3 dishes is insanely delicious in their own right. But being eager to start with a bang and try more than one recipe, and not wanting to be overwhelmed on a work night, I chose the 3 that seemed the simplest. Obviously, the simplicity did not sacrifice taste or experience because each one was an absolute hit!

This is the stuff that makes you make awkward moans and groans at the table and say “oh ma gaw” with a full mouth. It’s that damn good!

The omelet was made with @justegg , some fresh carrot, bell pepper & green onions. With a bit of chopping and a good pan, you are ready to rock and roll. Literally roll!

The braised tofu was so easy to grill up in the pan too, topped with more fresh veg like onion, carrot & mushroom. Pouring the spicy soy sauce on top gives the tofu so much flavor & a bit of caramelization.
One tip: if your onions are still a little crunchier than you like, just pull the tofu slices out and give them a few more minutes to cook down in a splash of water.

We served ours with rice and a bit of kimchi (store bought, for now, though I can’t wait to make the version in the book!)

The book is also a lovely read. I’ve teared up at least 3 times and I’m only on page 20.
