I had yet to make a chowder since turning vegan over 8 years ago. Let me tell you what a mistake that was!!!! Chowder is the bomb! THIS chowder, more specifically, is the bomb diggity! It's luscious, hearty, creamy & dreamy! It feels all cheezy and indulgent even though there is not a spec of vegan cheese in it. Utter trickery, I tell you!
This is a nutritious recipe that you can feel so good about enjoying! Loaded with cauliflower, carrot, onion & celery, you get a nice dose of fiber, folate, vitamins A, C & K, potassium, calcium, antioxidants and phytonutrients! The recipe does call for a mere one tablespoon of sunflower oil or vegan butter, which you can omit completely if you are oil-free.
The chowder comes together quite easily, making it a suitable contender for your busy weeknights. You will need your trusty blender handy, as the trick to getting this baby creamy lies in blending a small portion of the soup and pouring it back into the pot. *Chef's kiss* Brilliant!
